Sardine fritters

These nutrient-dense sardine fritters are perfect snacks for mama and mini. Full of Omega 3’s DHA, calcium, iron, healthy fats and other essential nutrients, they support brain development, strong bones, and overall health. They make a nourishing one handed snack for a postpartum mama, perfect to grab whilst breastfeeding. They are also great lunch box fillers for little ones.

Ingredients

  • 1 can of sardines (Goodfish official are my favourite)

  • 2 eggs

  • 1 zucchini (grated)

  • 2 potatoes (mashed)

  • Handful of spinach (finely chopped)

  • Few sprigs of parsley (finely chopped)

  • Lemon rind and juice (from half a lemon)

  • Coconut oil (for frying)

  • OPTIONAL: 1 tablespoon of collagen powder, 1 teaspoon of desiccated liver (Cellsquared is the best)

Method

Mash the sardines with the eggs, grated zucchini, mashed potatoes, finely chopped spinach, parsley, lemon rind and juice. Mix through collagen powder and/or desiccated liver if you are using. Heat coconut oil on the fry pan. Roll fritters into balls, squish on to the pan. Cook, flip, cool and enjoy!
